Rather than growing oysters directly on the bay floor, Umpqua Aquaculture uses an innovative suspended long line method. Young oysters are attached to recycled oyster shells and suspended on long curtains in the water, where they grow for approximately two to four years without touching bottom sediment. Continually submerged in cool, clean water, the oysters develop the slightly salty, sweet flavor that has made Umpqua Triangle Oysters a favorite among Pacific Northwest oyster lovers.
